Homemade tofu
Homemade tofu allows you to adjust the texture and flavour to your liking, making it adaptable for different recipes, whether you want it crispy in the frying pan or soft for soups and salads. An added bonus of homemade tofu is that the leftover soya paste can be easily reused, including for vegan hummus.Fresh tofu in a few simple steps
1. Soak the soybeans overnight, or at least for 12 hours (use plenty of water as the soybeans swell during soaking).2. Mix the beans with water (use about 3 parts water to 1 part beans), then strain the mixture using a mesh strainer.
3. Boil the soya milk and add a coagulating agent like nigari, calcium sulphate, vinegar or lemon to create a firm tofu paste (the amount of acid varies depending on the type used. Check the amount for the acid you are using).
5. Place the supplied cloth in the tofu press and then press the tofu paste by placing a weight on the lid (15+ minutes).
Note! Water is squeezed out of the tofu press. Therefore, avoid placing it on surfaces that does not can withstand moisture.
